How to Tell if Your Dough is Properly Kneaded
Kneading requires a rhythmic gentle motion to provide opportunity for gluten to develop. It also incorporates air and distributes ingredients evenly  You can knead by hand or using a stand mixer.  If by hand, you can do a stretch and fold method.  Set to medium low if using a stand mixer.  It takes 8 minutes to knead mechanically and 25 minutes manually. Kneading is properly done when the dough becomes smooth and elastic and does not stick on the side of the mixing bowl.
